Back in the eighties, it seemed like the pita sandwich was everywhere. I remember going to the tavern with my mom and they would serve their hamburgers on pita bread. That burger was awesome, I think, because it was so peculiar to be served on something other than a hamburger bun.
Place a cast iron pan on your stove top and warm on low. Place the pitas in the pan to warm up. When warmed up, cut each pita in half and fill with greens, tomatoes, scallions, avocados, and tzatziki. Combine the ground turkey, carrots, scallions, parsley, and spices in a bowl and mix well. Add a tablespoon of vegetable oil to the cast iron pan and heat on medium-high.Take some of the ground turkey mixture and form in to a large flat patty, larger than the diameter of the pita bread. Place in the pan to heat through, about 2 minutes, then flip to the other side for another minute.Remove turkey burger from the pan and let sit for at least a minute. Cut in half and place in each half of your pitas.
