Lemon and Tarragon Dressing

This lemon and tarragon dressing will work on light salads, fish, and in veggie wraps.

Ingredients
  

  • Zest of half a lemon
  • Juice of one lemon
  • 1 tb tarragon minced
  • 1/2 cup olive oil
  • 1/4 tsp salt
  • 1 tsp pepper

Method
 

  1. Reserving the olive oil, add other ingredients to a bowl or cup with high sides.
  2. Begin blending ingredients with immersion blender and slowly add the olive oil until all ingredients are emulsified.
