This lemon and tarragon dressing will work on light salads, fish, and in veggie wraps. An immersion blender makes quick work on this dressing in less than five minutes.
Lemon and Tarragon Dressing
This lemon and tarragon dressing will work on light salads, fish, and in veggie wraps.
- Zest of half a lemon
- Juice of one lemon
- 1 tb tarragon minced
- 1/2 cup olive oil
- 1/4 tsp salt
- 1 tsp pepper
- Reserving the olive oil, add other ingredients to a bowl or cup with high sides.
- Begin blending ingredients with immersion blender and slowly add the olive oil until all ingredients are emulsified.
