Back in the eighties, it seemed like the pita sandwich was everywhere. I remember going to the tavern with my mom and they would serve their hamburgers on pita bread. That burger was awesome, I think, because it was so peculiar to be served on something other than a hamburger bun.
Pita is still hanging around, typically when served with hummus for scooping. In fact, that’s how I ended up with this pita bread from Whole Foods, to go along with the hummus I purchased. As I was getting some chicken (soon to be featured in the next blog post) I looked at the ground turkey and thought it would make for a great pita sandwich. Add some tomatoes, cucumber, greens, scallions, and tzatziki and we’re going to Pitatown! I also threw on some avocados because, why not?
For the turkey ‘burger’, I just mixed it in a bowl with equal parts of garlic powder, onion powder, oregano, and paprika. I shredded up some carrot, minced some scallions and finely shopped some parsley to mix in with the turkey before I formed a large, flat patty to fry in my cast iron skillet. I can’t recommend this enough, so delicious! If you can find some lamb, I’d suggest you sub it in place of the turkey. Oh man, I was just thinking, this would be even better on the grill!
Ground Turkey Pita Sandwich
- 1 lb. organic ground turkey
- 3 medium carrots shredded
- 2 scallions minced
- small handful of parsley finely chopped
- 1 Tbsp garlic powder
- 1 Tbsp onion powder
- 1 Tbsp paprika
- 1 Tbsp oregano
- salad greens
- 2 pitas
- Place a cast iron pan on your stove top and warm on low. Place the pitas in the pan to warm up. When warmed up, cut each pita in half and fill with greens, tomatoes, scallions, avocados, and tzatziki. Combine the ground turkey, carrots, scallions, parsley, and spices in a bowl and mix well. Add a tablespoon of vegetable oil to the cast iron pan and heat on medium-high.Take some of the ground turkey mixture and form in to a large flat patty, larger than the diameter of the pita bread. Place in the pan to heat through, about 2 minutes, then flip to the other side for another minute.Remove turkey burger from the pan and let sit for at least a minute. Cut in half and place in each half of your pitas.
