Loaded with cheesey eggs, bacon and breakfast sausage, this breakfast burrito is The Bomb!!
Sometimes youre feeling a little groggy from staying out late last night and you really want a cheesey, eggy, bacony, maple sausagey, burrito bomb with a hint of veggies so you don’t feel too guilty. Add a bloody mary and… you know what comes next.
For the cheesey eggs, beat three eggs with a splash of milk and a pinch of salt. Cook over low heat in a non stick pan while stirring often with a wooden spoon. Stirring over low heat is going to give you more of a custard like consistency. If they’re too loose for you just don’t stir as much. Incorporate a half cup of freshly shredded cheddar cheese about a minute before you’re ready to take the eggs of the heat. This should all take about 12 minutes.
Fry your bacon in a cast iron skillet then set aside on paper towel. Discard most of the bacon grease then add the sausage. Cook until brown and the edges are crispy. Set aside with the bacon then add the onions and peppers. When the onions are just about tender, add a half cup of pinto beans and cook through.
Assemble burrito with washed spinach, diced tomatoes, sliced avocado, and the remaining cooked ingredients.

- 1 medium yellow onion sliced
- 1 medium bell pepper sliced
- 1/2 cup pinto beans
- 1/2 avocado
- 1 medium vine ripe tomato diced
- 4 strips bacon
- 2 breakfast sausage links
- 1 large handful baby spinach
